I found this recipe in my taste of home cook book and it's delicious.
I has to be mixed by hand. Don't use a mixer.
CARMEL APPLE CAKE
- 1-1/2 cups veg. oil
- 1-1/2 cups sugar
- 1/2 cup Packed brown sugar
- 1 eggs
- 3 cups all purpose flour sifted
- 2 tsp. cinnamon
- 1/2 tsp nutmeg
- 1 tsp soda
- 1/2 tsp salt
- 3-1/2 cup diced peeled apples
- 1 cup chopped walnuts
- 2 tsp vanilla
Combine oil and sugars. Add eggs 1 at a time. Combine dry ingredients. Add to batter. Stir well. Fold in apples, walnuts and vanilla. Pour into well greased and floured 10" bundt or tube pan. Bake at 325* 90 min. or until done. Cool about 5 min remove and cool completely.
CARMEL ICING:
- 1/2 cup packed brown sugar
- 1/3 cup light cream
- 1/4 cup butter or marg.
- dash salt
- 1 cup powdered sugar
- chopped walnuts
In microwave or double boiler, heat brown sugar, cream, butter and salt until sugar dissolved. Cool to room temperature. Beat in powdered sugar until smooth. Drizzle over cake. Sprinkle with chopped nuts. (I usually make double recipe as husband like's extra frosting)
This makes a very moist cake and also have made it in 9x13 pan
