Applesauce and plain yogurt are great fat substitutes. For maximum texture and flavor, replace no more than half the amount of fat listed in the recipe. So if a recipe calls for a 1/2 cup of butter, substitute 1/4 cup applesauce. You'll cut out more than 40 grams of fat and 400 calories.
